Brown Atta is a high fiber flour made from fresh whole grain of wheat, which includes the bran, germ, and endosperm. White atta, on the other hand, is made from the endosperm of the wheat grain, and the bran and germ are removed during the milling process. As a result, brown atta retains more of the nutrients and fiber of the wheat grain. Brown atta is usually slightly heavier and denser and it has a nuttier, slightly sweeter taste. It is also generally considered to be healthier than white atta, as it contains more nutrients and fiber.
